O aumento da população e a ocupação urbana desordenada são fatores determinantes para o crescimento significativo da ocorrência das doenças de transmissão hídrica e alimentar. Isso gera um grande impacto econômico e na saúde pública, como consequência da sua morbi/mortalidade. A regulamentação determina de que forma devem ocorrer a prevenção e o controle, que são as melhores estratégias para lidar com a questão. Para isso, as análises microbiológicas laboratoriais são essenciais. O Brasil frequentemente sedia importantes eventos de massa, inclusive com participações internacionais, aumentando o número de turistas nas cidades sede. O Rock in Rio é um dos maiores festivais de música do planeta, e a vigilância sanitária tem um papel fundamental na proteção da saúde da população durante esses eventos. O objetivo deste estudo foi avaliar a qualidade microbiológica de 102 amostras de alimentos coletadas durante o Rock in Rio 2022. Foram realizados os ensaios de: pesquisa de Salmonella spp. pela técnica de enriquecimento seletivo; e contagem de Escherichia coli, Bacillus cereus e Estafilococos coagulase positiva por métodos semiautomatizados. A categorização e classificação das amostras e seus resultados foram definidos pela legislação vigente, que determina os limites microbiológicos para alimentos, a Resolução de Diretoria Colegiada nº 724/2022 e a Instrução Normativa nº 161/2022. Dentre os alimentos analisados, 10 (9,80 %) foram classificados como insatisfatórios. A maioria (n=8, 80,0 %) foram de alimentos preparados prontos para o consumo elaborados com o emprego de calor, uma amostra de sanduíche e uma amostra de doces e sobremesas. Três (2,94 %) amostras foram consideradas satisfatórias com qualidade intermediária. E. coli foi identificado em cinco (4,8%) amostras, estafilococos coagulase positiva em três (3,3 %) e B. cereus também em três (3,7 %). Conclui se que ações de fiscalização, incluindo a avaliação da qualidade microbiológica de alimentos, são importantes para redução de riscos de casos e surtos de doenças de transmissão hídrica e alimentar durante eventos de massa. Os dados obtidos nestes monitoramentos são importantes para elaboração de medidas preventivas para próximos eventos.
Abstract
Population growth and disorganized urban occupation are determining factors for the significant growth in the occurrence of waterborne and foodborne diseases. This generates a great economic and public health impact, because of its morbidity/mortality. Regulation determines how prevention and control should occur, which are the best strategies to deal with the issue. For this, laboratory microbiological analyzes are essential. Brazil often hosts important mass events, including international participation, increasing the number of tourists in the host cities. Rock in Rio is one of the biggest music festivals on the planet, and health surveillance plays a key role in protecting the population's health during these events. The objective of this study was to evaluate the microbiological quality of 102 food samples collected during Rock in Rio 2022. The tests were carried out: research for Salmonella spp. by the selective enrichment technique; and counting of Escherichia coli, Bacillus cereus and Coagulase positive staphylococci by semi automated methods. The categorization and classification of the samples and their results were defined by the current legislation, which determines the microbiological limits for foods, the Resolution of the Collegiate Board nº 724/2022 and the Normative Instruction nº 161/2022. Among the analyzed foods, 10 (9.80 %) were classified as unsatisfactory. The majority (n=8, 80.0 %) were ready-to-eat prepared foods prepared using heat, a sample of sandwiches and a sample of sweets and desserts. Three (2.94%) samples were considered satisfactory with intermediate quality. E. coli was identified in five (4.8 %) samples, coagulase positive staphylococci in three (3.3 %) and B. cereus also in three (3.7 %). It is concluded that inspection actions, including the assessment of the microbiological quality of food, are important to reduce the risk of cases and outbreaks of waterborne and foodborne diseases during mass events. The data obtained in these monitoring are important for the elaboration of preventive measures for upcoming events.

La croissance démographique et l’occupation urbaine désorganisée sont des facteurs déterminants pour l’importante augmentation de l’apparition de maladies d’origine hydrique et alimentaire. Cela génère un grand impact économique et impact sur la santé publique, en raison de sa morbidité/mortalité. La réglementation détermine comment la prévention et le contrôle devraient avoir lieu, ce qui constitue la meilleure stratégie pour résoudre le problème. Pour ça, les analyses microbiologiques en laboratoire sont indispensables. Le Brésil accueille souvent d'importants événements de masse,y compris une participation internationale, augmentant le nombre de touristes dans les villes hôtes. Rocherà Rio est l'un des plus grands festivals de musique de la planète, et la surveillance sanitaire joue un rôle clé à protéger la santé de la population lors de ces événements. L'objectif de cette étude était de évaluer la qualité microbiologique de 102 échantillons alimentaires collectés lors de Rock in Rio 2022. Les tests ont été réalisés : recherche de Salmonella spp. par la technique d'enrichissement sélectif ;et comptage des staphylocoques Escherichia coli, Bacillus cereus et Coagulase positifs par des méthodes semi-automatiques. La catégorisation et la classification des échantillons et leurs résultats ont été définies par la législation en vigueur, qui fixe les limites microbiologiques des aliments, les Résolution du Conseil Collégial nº 724/2022 et Instruction Normative nº 161/2022. Parmi les aliments analysés, 10 (9,80 %) ont été classés comme insatisfaisants. La majorité (n=8,80,0 %) étaient des plats préparés prêts à consommer préparés à chaud, un échantillon de sandwichs et um échantillon de bonbons et de desserts. Trois (2,94%) échantillons ont été jugés satisfaisants avec qualité intermédiaire. E. coli a été identifié dans cinq échantillons (4,8 %), coagulase positive staphylocoques dans trois (3,3 %) et B. cereus également dans trois (3,7 %). Il est conclu que l'inspection des actions, y compris l’évaluation de la qualité microbiologique des aliments, sont importantes pour réduire le risque de cas et d’épidémies de maladies d’origine hydrique et alimentaire lors d’événements de masse. Le les données obtenues lors de ces suivis sont importantes pour l’élaboration de mesures préventives pour évènements à venir.
