Acredita-se que o café seja conhecido há mais de mil anos no Oriente Médio, mais especificamente na região de Kafa, tendo sido os árabes os primeiros a cultivá-lo, o que deu origem ao nome Coffea arabica, uma das mais importantes espécies de café. As evidências botânicas sugerem que a planta do café originou-se na Etiópia Central. Os ensaios microscópicos foram realizados visando à verificação da contaminação do produto pela presença de elementos estranhos, sujidades, larvas, excrementos de roedores, areia, terra, vidro, metal, insetos vivos ou mortos e seus fragmentos. Os ensaios microbiológicos com a finalidade de determinar as possíveis contaminações microbiológicas que o produto pode sofrer durante o processo produtivo, tanto pela utilização de matéria-prima inadequada, quanto por questões que envolvam a manipulação, armazenamento e transporte do produto, seja por parte do fabricante ou do estabelecimento que o comercializa. Um total de 23 amostras diferentes de marcas de café torrado e moído foram analisadas, sendo quinze de consumo interno e oito destinadas à exportação. As amostras de café torrado e moído foram analisadas no Laboratório de Alimentos e Contaminantes do Instituto Nacional de Controle de Qualidade em Saúde -Fiocruz e no Laboratório de Fisiologia Bacteriana do Departamento de Bacteriologia do Instituto Oswaldo Cruz-Fiocruz. O resultado da análise microbiológica comprovou a presença de Bacillus cereus, sendo um indicativo agravante e possível causador de intoxicação nos consumidores. Em relação a analise microscópica, 87 por cento das amostras apresentaram quantidades representativas de fragmentos de insetos, presença de vidros 34 por cento e em 8 por cento das amostras comprovou-se a ocorrência de elementos histológicos estranhos ao produto.
